This dish got its name because it is thought that when the bacon is used to wrap the interior, it looks like the armadillo's shell. They are very often covered with bbq sauce, and then grilled or smoked. They are typically made with jalapeño peppers stuffed with cream cheese, then wrapped with bacon and/or sausage.
